It is very delicate and must be handled with care with a mother-of-pearl (or gold!) spoon so as not to alter its flavor in any way. It is the creamiest of caviars, the membrane of the eggs is very soft. Olfactory sensations of sea and butter. To be tasted absolutely pure.

The Beluga Sturgeon

Beluga sturgeon reaches maturity at about 20-22 years of age and can weigh over 100 kg. If the caviar is not extracted at the right time, it will take another 5 years before it is ready again. After this time, the eggs will have an even larger size.
It can live up to 100 years.
The largest specimen ever caught was almost 9 meters long and weighed 1500 kg!

100g of caviar provide approximately 260 kcal divided as follows:

This is the only caviar to be tasted in absolute purity!
Make sure you don't have any perfume on your hand.

Take a small amount of caviar with the mother-of-pearl spoon and place it in the hollow of your hand between your thumb and forefinger: the heat of the skin will make the cold caviar “open”
and releases its aromas finding the right balance of flavour and persistence.

If you want to serve it on a tray, the combination with classic blinis is fabulous: if you want, spread a thin layer of butter or sour cream which will help enhance the creaminess of this spectacular caviar!

Storage tips

Caviar should be stored in the coldest part of the refrigerator, usually the bottom shelf. Storage temperature: 0 °C to 4 °C

Once the can is opened, caviar must be consumed within 48 hours.
