WE STARTED LIKE THIS...
We embarked on a fascinating journey to bring to the market a niche product that is still little known: Italian caviar. With Italy being the main producer of farmed caviar in Europe, we immediately understood the extraordinary potential of this precious gastronomic jewel. Through targeted visits to selected farms, we carefully chose the best caviar, ensuring rigorous controls to ensure that every stage of production maintains high standards.
Our caviar comes exclusively from sturgeons raised in tanks fed by spring water, located in uncontaminated areas of Lombardy and Veneto. The supply chain is short and sustainable: from production to packaging, we follow every step with attention. The fish are raised from an early age with GMO-free feed in tanks of pure and crystalline water, while the entire production cycle is powered by photovoltaic energy.
Every single sturgeon is respected, constantly monitored in a cutting-edge laboratory certified according to Italian regulations.
The processing of caviar is entrusted to master salters, who use exclusively artisanal and traditional techniques, such as the "Malossol" method (from Russian: lightly salted), synonymous with fine and superior quality caviar.
